Falafel Pizza

This past week I made this deliciousness... Falafel pizza. Mmm, yum. It's a twist on pizza you weren't quite expecting.

I don't have an exact recipe, so here it goes.

1 pkg falafel mix
2 c hummus (I made homemade)
1/2 sliced cucumber
1 tomato diced
1/2 c sliced olives
1/2 c plain yogurt + 1/2 cucumber + 1 tsp diced garlic

Mix falafel according to directions on box or make from your own recipe. Spread "dough" out like pizza dough and bake for 15-20 minutes at 350F until crispy.

To make your cucumber yogurt sauce, in a food processor, blend yogurt 1/2 cucumber and garlic.

To create this pizza masterpiece spread hummus over crust, layer veggies and drizzle with yogurt sauce.
