Heat oil in a saucepan and add the chopped onion and cook until translucent. Then add the vegetables, salt and pepper. Stir for one minute. Then add the broth, cover and simmer until tender. Squeeze lime juice and serve.

2 tbsp - Olive Oil

2 tablespoons - Thyme
1 tsp - grated lemon rind

Combine oil, garlic, salt, pepper and thyme for the materials to prepare.
